Wow you are a vegetarian now?!

Timeline: 2 years ago. My first unpleasant reaction to my son Karl Walcott when he told me he was going to be a vegetarian-pescatarian. How dare he? What are we going to do for family dinners, we love our meat, turkey, chicken, cold cuts and kolbassa? Then he insisted I watch the documentary from Netflix called, “What the Health”; meanwhile, I have been taking care of my mother for twelve years and she was constantly complaining about her back. We tried several visits to the doctor, occasionally a couple of Tylenol, warming pads; basically everything I thought could help her. Until I finally, reluctantly watched “What the Health”! I had no idea that eating certain foods, that are highly recommended on our food guide could be so harmful to us and the environment. But what really convinced me was the coverage on how eating less or no meat helped reduce pain and other aliments without the use of medications. Voila! I might have found a cure for my mom.

I am her sole care taker, I prepare all the meals; although she was a phenomenal cook in her past. Since I was in charge of cooking, I decided to try vegetarian options; thus the start of Cantine Kat. As I mentioned, my mom was a great cook so it would be difficult to fool her. After many trials, errors and seeing her chew like I had given her horrible chewing gum to eat, Cantine Kat was born. Still to this day when she prejudges something that I make that will not meet her standards, she insists that she is not hungry? She is lactose intolerant, doesn’t like cilantro, loves potatoes, beans, nuts and salads of all kinds. So I cater to her favorites without cooking the same thing twice in one week, using Cantine Kat recipes as a guide. Once or twice a week we have fish. If we lived near a body of water that supplied great fish, we would eat it more often.

As soon as we were eating recipes like what we find on Cantine Kat, both my mom and I had no more symptoms of arthritis. She no longer has high cholesterol, she is walking everyday and she lost about 5 pounds a month; without restrictive dieting. Now, two years later; she is still cholesterol free, walking faster, lost 93 unhealthy pounds and she has no pain in her back. Thank you Karl Walcott!!! It is never too late to start something new to help your health.
